It's perfectly fine to use this version. I recommend using the long-term support version, even if you're watching this video and Blender has already released versions 3.0, 3.1, or even 4. I guarantee you that 99% of how Blender works, its main functions, will remain the same. Blender has been in the market for a long time, so don't worry.
